Peanut Ginger Dressing and Chickpea Millet Salad

Have you already tried peanut dressing? If not, it’s high time to make your own! (And if yes, too…) Beside peanuts my version contains ginger, honey, balsamico and dill. An absolutely heavenly combination.

I specially like to use this dressing with a chickpea millet salad. Millet is a delicious gluten-free cereal that looks similar to couscous. In this recipe it soaks the thick peanut ginger dressing and gets a very strong taste. Chickpeas and some fried vegetables are a good addition.

Of course you can create your own salad and give it an exotic touch with this peanut ginger dressing. For example, you can make a salad based on lettuce, rice or asian noodles.

Here is the recipe for a tasty chickpea millet salad with peanut ginger dressing:

Soak the chickpeas overnight. Then, strain off the water and wash them well so that they will be more digestible. Cook them with 600 ml water and a pinch of salt for about an hour. If you prefere, you can also used precooked chickpeas.

Meanwhile, cut the carrots and the zucchini into small pieces.

Fry the vegetables with a pinch of salt and the olive oil only for some minutes so that they stay crunchy.

Now you can prepare the dressing. Just blend the peanuts, the ginger, the balsamico, the honey and the dill with 100 ml water.

Wash the millet in a sieve and cook it for 10 minutes with a pinch of salt and 600 ml water. Mix it with the fried vegetables and the chickpeas. Finish by adding the dressing.

PEANUT GINGER DRESSING

lactose-free, soy-free, gluten-free

Preparation time:

Level of difficulty: very easy

Ingredients:

  • 80 g/2.8 oz peanuts, roasted and salted
  • 1 tbsp fresh ginger
  • 30 ml red balsamico
  • 10 g/0.4 oz honey
  • 1 tbsp dill (optional)

Directions:

Blend all ingredients with 100 ml water.

CHICKPEA MILLET SALAD

lactose-free, soy-free, gluten-free

6 servings

Preparation time: 30 min (+ 12 h soaking time + 1 h cooking time)

Level of difficulty: easy

Ingredients:

  • 200 g/7 oz dried chickpeas
  • 200 g/7 oz millet
  • 5 carrots
  • 2 zucchinis
  • 1 tbsp olive oil

Directions:

Soak the chickpeas in water overnight. Then, strain off the water and wash them well. Cook them with 600 ml water and a pinch of salt for about an hour. Cut the vegetables into small pieces and fry them with a pinch of salt and the olive oil. Keep sure they stay crunchy. Wash the millet and cook it for 10 min with 600 ml water and a pinch of salt. Mix it with the chickpeas and the vegetables before adding the peanut ginger dressing.
